Roasted Cauliflower with Medjool Dates and Pine Nuts

Ingredients

1 large head cauliflower, cut into florets

3 tablespoons olive oil

1/2 cup pitted medjool dates, chopped

1/3 cup pine nuts

1 clove garlic

Preheat oven to 425 degrees.

Evenly spread the cauliflower on a baking sheet, drizzle with 2 tablespoons olive oil and season with salt.

Roast until golden about 30-40 minutes. Toss every 10 minutes while roasting.

Meanwhile, heat olive oil in pan and then add pine nuts and saute until golden brown.

Add garlic and dates and saute until dates are soft and the pan is fragrant.

Pour over roasted cauliflower and serve.
