Shrimp Farro Salad

Farro is my current salad obsession! It is an ancient grain high in fibre, protein, magnesium and iron! It also the perfect addition to any salad as it tastes great and is super filling!

Ingredients

Farro-1 cup cooked

Arugula-3 cups

Grapes-1 cup

Shrimp-1 lb

Parmesan-handful of shredded

Olive oil

Garlic-clove

Champagne vinegar

Sunflower seeds-handful of salted

 

Instructions

Cook farro according to package instructions.

Sauté garlic in tablespoon olive oil until fragrant, sauté shrimp until pink.

Add farro to salad bowl, layer with arugula, grapes, shrimp, parmesan, drizzle with champagne vinegar and olive oil and sprinkle with sunflower seeds!
