Farmers Market Salad

The perfect salad for a picnic with all ingredients available or about to be at your local farmers market.

Ingredients

3 ears white corn, kernels removed

6 ounces green beans, ends trimmed

3 large tomatoes or 8 cherry tomatoes, sliced

1/2 cup red onion

1/3 cup fresh flat parsley

1/2 cup white wine vinegar or champagne vinegar

6 tbsp vegetable oil

3 tablespoons cane sugar

Cook beans in boiling water for 2-3 minutes.

Add corn and cook for additional 2 minutes. 

Drain. 

Add to sliced tomatoes and onions.

Whisk oil, vinegar and sugar together.

Toss dressing to coat, season with salt and pepper and add parsley.

Salad can be kept overnight in fridge.
