Thai Coconut Soup

Ingredients

1 tbsp lemongrass chopped

1 tbsp ginger chopped

1 tbsp green curry

1 large clove garlic

1/2 onion chopped

1/2 pound sliced mushrooms

1/2 cup snow peas, chopped

1/2 red pepper

1 lb shrimp deveined

1 can coconut milk

1 cup broth of any kind

1 can crushed organic pineapple

1 can pineapple chunks

1 1/2 tbsp fish sauce

juice of 1 lime

coconut oil

cilantro

hot sauce

Saute onion and mushrooms for a couple of minutes in oil.

Add lemongrass, green curry, garlic and ginger and saute until very fragrant.

Add in snow peas and pepper and saute another couple of minutes.

Add coconut milk, broth, fish sauce and lime and simmer for 5 minutes.

Add pineapple to soup and shrimp and continue to simmer until ready to serve.

Serve with hot sauce and cilantro to taste.

  • I add rice for my healthier eaters in the family.
