Ingredients
6 beets
sweet potato
1 cup farro
vegetable broth
mushrooms
arugula
olive oil
salt and pepper
Preheat oven to 400 degrees.
Prick sweet potato with a fork 2x and bake in oven at 400 degrees for 50 minutes.
Remove tops of beets, peel and cut into chunks and toss with olive oil. Roast 35 minutes at 400 degrees.
While sweet potato and beets are roasting, cook farro according to directions on package, i love to cook in vegetable broth for extra flavor.
Saute assorted mushrooms in olive oil when farro and vegetables are 5 min from being ready.
When vegetables are tender, remove from oven and remove sweet potato from skin.
Assemble in bowl and top with arugula. Drizzle with olive oil and add salt and pepper.
*I like to pre cook all ingredients and have them ready to go for dinner time!
