Date and Seed cookies

This is the perfect on the go cookie and also great for a lunchbox. I used gluten free oats and almond butter!

This recipe is from Sprouted Kitchen, a terrific resource and one of my favorites!

Ingredients

1 cup pitted dates

1 cup oats

1/2 cup seed or nut butter

1 tbsp chia seeds

pinch of salt

pinch of cinnamon

glaze:

2 tbsp melted coconut oil

3/4 tbsp maple syrup

3 tbsp cocoa powder

Put the dates and oats in a food processor or Vitamix and pulse until sticky. Add the butter, chia seeds, salt and cinnamon and pulse again. If mixture is dry, add water and pulse again.

Line a plate or cookie sheet with parchment paper. Roll the mixture into small balls and press centers down with a fork. Refrigerate for an hour minimum.

Mix glaze together and drizzle onto center of cookie. Chill until ready to eat.
